I have a tough time making myself eat walnuts. I think their a bit bitter. However, over the years my tastes have changes.

Nuts, nutrition research has revealed, are an important part of our diet, offering the right type of fats that protect heart and brain health. Much of the illness we experience in the West is diet-related. Eating habits have changed over the years and people are paying the piper with disease emergence and concurrent health challenges.
Lauren, bitterness can be related to walnuts not being fresh. I've eaten fresh walnuts that were wonderful and almost sweet. I've also eaten walnuts out of the package that were bitter, or, of all things, rather hot.
Walnuts have been a nutritous treat in our family for many years. I have also noticed the difference in taste between the fresh and stale walnuts. My father likes to feed the squirrels with the left over Christmas walnuts that have went stale.
